flavored butters

This summer I tried flavored butters on my corn on the cob for the first time.  I still love plain butter and salt on my corn, but now I also love to dress up my corn with adventurous flavors.

Our friend Frannie took some blue cheese butter I’d made to go with grilled steaks and put it on her corn, and it was a hit.  Here’s the recipe for that:

Blue Cheese Butter:

4 oz. blue cheese – I use a creamy one, but any will do
3 T unsalted butter – softened
3 T chopped chives
Can be made several days ahead and kept in fridge

My brother-in-law made Grilled Corn Mexican Style from a NY Times recipe and it was unbelievable!!

Other flavors to try:

Lemon Dill Butter:

1 T finely chopped shallot
1/3 cup soft butter
1 tsp chopped fresh dill
grated peel of 1 lemon
salt & pepper to taste

Herb Butter:

1 tsp minced fresh parsley
1 tsp minced fresh basil
1/4 tsp minced garlic
1 tsp minced fresh shallots
1 T lemon juice
2 sticks unsalted butter
salt & pepper to taste

Cheese Butter:

Parmesan or cheddar cheese mixed with butter and a little Worcestershire sauce to taste.
