Ginny and I are thinking about summer and all the delicious food that summer brings. We thought we’d share a few of our favorite summer recipes with you. Here is a three-course summer meal:
I love The Barefoot Contessa’s mint pea soup. It’s easy to make and I serve it cold.
My family never gets tired of grilling swordfish and this marinade just can’t be beat!
Marinade for grilled swordfish steaks:
¼ cup olive oil
1 ½ tablespoons lemon juice
2 tablespoons white wine
2 tablespoons grated onion
2 tablespoons soy sauce
1 tablespoon sugar
salt & pepper to taste
Mix all ingredients together and spoon over fish. Let stand for at least an hour. Broil or grill fish over hot coals, brushing once or twice with marinade.
Nick Phelps, founder of From The Farmer DC, a company that delivers CSA orders in and around Washington, D.C. introduced me to this New York Times recipe for Grilled Caesar Salad. It is delicious and will wow your friends. I have modified it by eliminating the lime vinaigrette. I think the Caesar dressing is delicious enough without it.
Ginny’s Watermelon, Feta, Tomato & Mint salad never fails to yield clean plates. It’s a great combination of sweet and tart, and different food textures.
This Zucchini and Asparagus Salad is easy and delicious. Use the freshest ingredients you can find.
I think the easiest summer dessert is a fruit galette. Use any and all of the fruits in season, especially the berries and peaches. Here is a link to a recipe I love.
