Ellen C. from New York gave this recipe to us, and we thank her every time we make it.  It’s the best we’ve had!

  • 1 whole chicken
  • ¼ cup olive oil
  • onions
  • garlic
  • carrots
  • any other vegetables you like
  • chicken stock – at least 6 – 8 cups depending on size of chicken

Put the chicken into a deep pot with the olive oil.  Brown chicken evenly– it will spit and smoke.

Cut up all the vegetables and put them in the pot.  The vegetables will sweat so no extra liquid is needed.  Cook for 20 minutes.

Cover the chicken and vegetables with chicken stock and cook for another hour

Remove the bones, cut up meat, and serve!
